Ingredients
- 6 ears fresh sweet corn, husked
- 1/2 cup unsalted butter, softened
- 2 tablespoons Tabasco sauce (or your favorite hot sauce)
- 1 tablespoon soy sauce
- 2 scallions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Juice of 1 lime
- 2 tablespoons fresh cilantro, chopped
- 1/2 cup crumbled cotija cheese (optional but recommended)
- Salt and black pepper, to taste
Instructions
- Preheat your grill to medium-high heat.
- In a small saucepan over medium heat, melt the butter. Add the scallions and garlic, stirring frequently until fragrant, about 2 minutes.
- Stir in the Tabasco sauce, soy sauce, cumin, and lime juice. Simmer for 1–2 minutes, then remove from heat. Stir in the chopped cilantro.
- Place the husked corn directly on the grill. Grill for 10–15 minutes, turning every few minutes, until kernels are tender and have a good char.
- During the final few minutes of grilling, use a basting brush to generously coat each ear of corn with the spicy butter mixture.
- Transfer the corn to a serving platter. Brush with any remaining spicy butter, and sprinkle with crumbled cotija cheese if using. Serve hot with extra lime wedges on the side.
